You want to eat most young cheddars within two weeks of purchase.They’ll last longer than that but just won’t be as tasty. Aged Cheddar will last a few weeks longer and has earned the right to be left alone next to breads, pastas and robust soups. We leave the melty, ooey-gooey dishes to young cheddars.
